3 cups diced chicken breast (or turkey)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3 tbsp teriyaki sauce
1 cup pineapple juice
2 tbsp vinegar
3 tbsp soy sauce
1/2 cup brown sugar
2 tbsp cornstarch
1/2 cup frozen pea pods
1/2 cup carrot peel
1 cup of pineapple tidbits or chunks (more or less to your liking)

Saute chicken (or turkey) with onion and bell pepper in teriyaki sauce and soy sauce. Remove everything from the skillet and place in another bowl. Stir pineapple juice, vinegar, brown sugar and cornstarch in the now empty skillet. Cook and stir until thick and clear. Remove from heat and add vegetables, pineapple and chicken (or turkey). Serve over hot rice

*optional - I usually serve dried chow main noodles (in the can) on top of everything
This recipe is also a good one to let cool after cooking and then place in freezer bag to be able to thaw out at a later date to heat and eat.
