Berry Pancakes with Riccota and Boysenberry Syrup

4 cups fresh basil
½ cup olive oil
1/4 cup pine nuts
2 garlic cloves
1/2 cup Parmesan cheese
1 teaspoon salt
Blend basil, olive oil, pine nuts, and garlic until it is a paste. Add cheese and salt and blend.
Makes enough pesto sauce for 16 oz pasta.
(You can add two medium peeled, chopped potatoes to the pasta when boiling.)
