Make sure you came hungry. I can usually only eat one of these and then I am spent.

Preheat oven to 350 degrees.
Have ham or cooked sausage (amount is to your liking)
12 eggs
1/2 cup milk
1 or 2 cans chopped green chilies
1/2 cup diced onion
1/2 cup diced green pepper
2 or more cups shredded cheddar cheese
8-12 large flour tortillas
1 or 2 cans Old El Paso Green Enchilada Sauce (mild)

Heat a large skillet over med-high heat and saute onions and peppers until tender. Put in bowl and set aside.

Wisk 12 eggs and 1/2 cup milk in a medium sized bowl. Stir in 1 or 2 cans of diced green chili peppers. Scramble eggs on medium heat in a large skillet. As egg sets up, stir in chopped ham or sausage, green peppers and onions.

Microwave large flour tortillas for 20 seconds between two damp paper towels. Fill each tortilla with some scrambled eggs, cheese and Old El Paso Green Enchilada Sauce. Roll like a burrito and place in 13X9 casserole dish. Continue until dish is full. Pour remaining sauce over the top of the enchiladas and sprinkle generously with cheese.

Bake at 350 degrees for about 30 minutes to heat through. Serve while hot.
Can garish the enchilada with salsa, guacamole, sour cream, etc...
